Cooking Terms:

All of the cooking terms that a student, or adult, will need to know in the kitchen. These are the definitions that my Foods teacher gave to us, so if they aren’t as in depth as you would like I’m sorry.

AL DENTE:
This is an Italian term, it is used to describe pasta that is cooked until it offers a slight resistance when you bite it..

BAKE: Cooking by dry heat, most likely in the oven.

Blend: Mix together, slowness.

Blending.

Boil: Bubbles break surface.

Boiling water.

Broil: High heat

Broiling.

Braise: Sear all sides of meat.

Braiseing a piece of meat.

Brown: Cook all the way through.

Browning some meat.

Chop: Large cut

Chopped

Cream: Mix fats and sugar

Creaming.

Core: Remove the center.

Core.

Cut in: Fat and flour.

Dice: Small regular cuts

Diced potatoes.

Dot: Little pieces.

Little dots of fondont.

Drizzle: Lightly

There’s drizzeling on the cookies.

Dust: Sprinkle lightly.

There’s a light dusting of powdered sugar.

Fold: Slow, wooden spoon, least stirring.

Julienne: Thin strips

Julienned carrots.

Knead: Work with hands.

Kneading dough.

Leavening: Let dough rise.

Mince: Tiny pieces.

Imagine it like this but a little bit smaller.

Marinate: To add flavor and texture.

Marinating meat.

Pare: To peel.

Pareing.

Pinch: Small amount.

Pinch a small amount.

Puree: Turn a solid to a liquid.

Turning a carrot into a pureed carrot.

Roast: Long time in the oven.

Roasting a chicken in a fire.

Sauté: Skillet with little oil.

Sautéing.

Scald: Heat dairy.

Scalding milk.

Sift: Add air.

Shifting with a pastry blender.

Simmer: Bubbles touch the surface.

Simmering.

Skim: Remove the fat.

Skimming the fat out.

Steam: Cooking with water vapor.

Steaming.

Stir- fry: Skillet with little oil on high heat.

Stir-frying.

Whisk: Adding air.

Whisking.

Zest: Citrus.

Zesting.
